This dal recipe has quickly become a favorite around here. It's amazing that only 2 cups of lentils go such a long way!

dal (adapted slightly from the Esalen cookbook)
1. Combine 1 chopped carrot, a tablespoon of minced ginger, 2 cups of lentils (I recommend yellow, red, or a combination of both as pictured here), and 8 cups of water. Bring to a boil, then reduce heat and simmer for about half an hour, until tender.
2. Mince 5 scallions and sauté in a little oil for about 2 minutes with 2 tablespoons of hot curry powder, 1 cup of raisins, and another tablespoon of minced ginger. Add 1/4 cup of tomato paste, then add to the lentil mixture along with a can of coconut milk (light is fine) and a teaspoon or so of salt, or to taste. I also add a little bit of honey and a dash of cinnamon. Let simmer for another 20 minutes, and you're done! I serve this with brown basmati rice, but it's delicious by itself and lasts a few days (which is good, because this recipe makes a LOT). Enjoy!
